Red hot wings with blue cheese dip


Serves 2

  • 12 Soanes chicken wings
  • Salt and pepper
  • 75 ml Red Hot sauce.
  • 25g butter
  • 100g blue cheese
  • 100ml mayonnaise
  • Splash of milk (optional)
  • Celery sticks to serve


Preheat the oven to 200C, 180C Fan, Gas 4

1. Place the chicken wings on baking tray and drizzle with oil, salt and pepper. Put in the oven to cook for 30mins. The chicken is cooked when its core temperature reaches 75C or when the juices run clear.

2. While the chicken is cooking, crumble the blue cheese into a bowl, add the mayonnaise and mix until well combined. Add the milk if the sauce is too thick for you. It should be a loose dip consistency.

3. Put the hot sauce and butter into a small saucepan bring to the boil and remove from heat, set aside.

4. When the chicken is cooked, transfer to a serving plate and drizzle with the hot sauce. Serve with extra hot sauce, blue cheese dip and celery sticks.
